Lunch & Dinner Recipes

Some of my Favorite Lunch & Dinner recipes which are great at any time of day. For me regular balanced meals are important and should be tasty.

Sweat Potato and Chicken Curry (works with any meat)

 

This curry is great to make in bulk and sometimes I will double up or even quadruple up the ingredients to make even more to stock up the freezer

 

What your need:

 

1. Chicken breast (or meat / fish or choice) 400g 

2. 1 Onion

3, 2 tbsp's Ghee 

4. 1 tbsp curry powder (or more its up to you)

5. 3 cups of spinach 

6. 1 tin of coconut milk

7. 1 cup of mushrooms

8. 1 cup of broccoli

9. 200g of sweet potato

 

1st add the ghee to a large pot and melt, once melted add the curry powder. Mix up fully and add the onion died up.

Once the onion if fried off take some pre steamed chicken (I always have tubs of cooked chicken in the freezer - defrost 1st) and add to the pot.

Next add the coconut milk and stir thoroughly.

Now chop up the rest and add to the pot stir again and cover and simmer for 30-40 minutes and just give a stir every 10 minutes 

 

Now serve this will give you 4 portions

Egg or Egg white Muffins

 

This are quick and easy muffins and are great to add any addition ingredients to suit. I will often add spinach, peppers, onions, cooked chicken, tuna, tabassco sauce, or lardons

They are great as it only takes a few minutes to prepare and 10-15 minutes cooking time.

 

What you need:

 

1. 8 eggs 

2. Any other ingredients 

 

Crack eggs into bowl and either just use the egg whites or the whole egg depending on what you want. I then give them a good whisk as this heps make them more fluffy. Then add any of the extra bits and stir then in.

Now poor the mix into a non stick cup cake baking tray and cook at 200c for 10-15 minutes.

 

 

now serve snd enjoy!

 

Now serve this will give you 2 portions/servings (number of muffins can vary based on spread in tray)
